Mediterranean Tuna and Pasta Salad

If you follow this blog, you know that I am a huge fan of the Mediterranean Diet. The other night, I wanted something quick and healthy to make that would be hearty and satisfying at the same time. I found this recipe on the Oldways website, and it was AMAZING. Seriously delicious, and makes great leftovers to eat for lunch the next day as well. I plan on making this the next time we have a party as it is easy, inexpensive, and VERY good!


1 can (12 ounces) tuna, drained

4 cups cooled whole wheat penne pasta (I used Quinoa pasta which worked great!)

1 pound (about 4) plum tomatoes,

chopped 1 6-ounce jar marinated artichoke hearts, drained and chopped

1 4-ounce can chopped ripe olives, drained

1-2 cloves garlic, minced (I used more because I love garlic!)

1/2 cup grated Parmesan cheese

2 tablespoons capers, minced (optional)

1/4 cup lemon juice

2 tablespoons red wine vinegar

1/4 cup extra virgin olive oil

1 teaspoon oregano or Italian seasoning

Salt and black pepper to taste


In a large bowl, combine pasta, tomatoes, tuna, artichoke hearts, olives, cheese, capers and garlic; toss gently. In a small bowl, combine lemon juice, vinegar, oil, oregano, salt and pepper; whisk to blend well. Toss tuna mixture with dressing. Serve and enjoy!
